Okay I'll admit, I've been cheating by using a bread machine all these years but I did get a WonderMill Junior (https://pleasanthillgrain.com/wonder-junior-deluxe-grain-mill) about 5 years ago to grind my own grains (though it has gotten dusty the last few). Problem now is yeast is hard to find along with flour.
I dug out the mill last week, dusted it off and ground some spelt and buckwheat. I started a wild yeast culture 4 days ago and today it finally showed a noticeable separation of floating liquid.
Hopefully I can try my hand at some sourdough next weekend.

Anyone here already doing this?

Having trouble finding baking supplies too but a restaurant near my place just sold me 10lbs of flour so I'm back in business!

My MIL has sourdough starter so I may give it a try, but zero clue what I'm doing. I did make buns last week that turned out well so I'm hopeful I won't fuck it up.

Oddly enough, yeast and flour are easy to find where I'm at. I guess people around here just aren't that destitute yet. I haven't started baking yet, though, but I will say homemade fresh baked bread is all that and then some.

Scored a jar of yeast and a bag of all purpose. Made a loaf of potato bread when I got home.
Butter melted nicely while the loaf was still hot.

Honestly I think it's not so much destitution as it is a mix of boredom and suddenly trendy - flour and puzzles are as rare as Purell here  Half my instagram feed is friends baking to kill the time, I don't think they're too broke for a loaf... yet.

Alright, I'm in possession of sourdough starter. Buddy dropped it off the other day with TWO PAGES of instructions including diagrams and extremely specific rules  I'm watching youtubes now but I'm intimidated. I'm a cook, not a baker.

Apparently I still need whole wheat flour because using a mix of all purpose and whole makes for more sour bread? I dono, I may just give it a whirl with all purpose only because that's all I have.

You are part of the problem :hand:

 What a headline

A tweet by user HelloCVH seems to have initiated the whole debate, suggesting that baking's skyrocketing popularity came at a very inconvenient time.

“Sourdough is wasteful and difficult and it's very silly to try your hand at it for the first time in a pandemic when there's barely any flour on the shelves[.] This is my lukewarm & scoldy take,” the tweet read.

Fuck off

Made a pretty good spiced applesauce bread (https://www.allrecipes.com/recipe/17683/spiced-applesauce-bread/?clickId=right%20rail0&internalSource=rr_feed_recipe_sb&referringId=60037%20referringContentType%3Drecipe) today. I used coconut oil to grease the pan and added coconut flakes to the recipe.

I made a sourdough starter (unbleached flour, water) last week collecting airborne yeast, made bread last night

"airborne yeast" I don't know what that is... It's a shame I don't have something that can look up information like that.

My starter has been trying for 6 days and still isn't very active. Hopefully I can use it Saturday.

Since it has been cold I had the same issue. I found leaving it near the over has been helpful

I think it was because I started it with spelt berries I had just ground and it was too coarse. The last three days I have been feeding it with all purpose and today it nearly doubled in 4 hours.
I think I will name it Abby. ( Young Frankenstein)
