For me, I would be very happy if all I could watch was Clint Eastwood movies. I almost wanted to choose Bruce Willis because Die Hard, but Clint has so many movies...so many great movies, that's what put him ahead for me.

Super boring answer but I might go with Matt Damon ... he has already been in a ton of classics and A-list movies from Good Will to the Bourne franchise to Saving Private Ryan, but just as importantly will be in many more big films for decades to come.
