A snack van owner from south London served food to customers in such filthy conditions even his hygiene safety manual was encrusted with dirt.

Gary’s Snacks owner Gary Johnston has been fined thousands after health inspectors found the floor of his van ‘soiled with dirt’.

They also found food was not covered inside the fridge and wrapping materials were left next to an open bin, posing a serious risk of contamination.

He was fined £7,500 after pleading guilty to 15 charges under food and safety hygiene regulations.

Johnston had initially stopped food safety inspectors from entering the van stationed at Chaffinch Business Park in Beckenham.

But police were awarded a warrant and inspectors returned accompanied by two officers on June 30.

Bromley Magistrates’ Court heard that the van’s sinks, used for cleaning and disinfecting equipment, were too small and fridges and freezers were also caked in dirt.

Johnston, who had not been on a food training course since 2003, was also found to not be wearing suitable protective clothing.

Following the conviction Kate Lymer, executive councillor for public protection and safety said: ‘We will take action to protect Bromley’s consumers and this prosecution and sentence gives a very strong message that this behaviour will not be tolerated.

‘Bromley’s Food Safety Officers routinely inspect some 2000 premises across the borough to ensure that they are well run and that customers are protected from poor hygiene practices.’
