I Sous Vide this Tri Tip to medium rare in my InstaPot for 2 hours, chilled it and cut it up for sandwiches. Ciabatta bread, Roman Lettuce, Tomato with Horseradish Mustard. I will be doing this for the foreseeable future, sous vide makes it damn near impossible to fuck up. The only thing I would change is I will fire up the grill as hot as it goes and sear it on both sides afterwards.
