    I Made This Fresh bread

    Okay I'll admit, I've been cheating by using a bread machine all these years but I did get a WonderMill Junior about 5 years ago to grind my own grains (though it has gotten dusty the last few). Problem now is yeast is hard to find along with flour.
    I dug out the mill last week, dusted it off and ground some spelt and buckwheat. I started a wild yeast culture 4 days ago and today it finally showed a noticeable separation of floating liquid.
    Hopefully I can try my hand at some sourdough next weekend.

    Anyone here already doing this?

    Having trouble finding baking supplies too but a restaurant near my place just sold me 10lbs of flour so I'm back in business!

    My MIL has sourdough starter so I may give it a try, but zero clue what I'm doing. I did make buns last week that turned out well so I'm hopeful I won't fuck it up.

    Oddly enough, yeast and flour are easy to find where I'm at. I guess people around here just aren't that destitute yet. I haven't started baking yet, though, but I will say homemade fresh baked bread is all that and then some.

    Scored a jar of yeast and a bag of all purpose. Made a loaf of potato bread when I got home.
    Butter melted nicely while the loaf was still hot.

    Honestly I think it's not so much destitution as it is a mix of boredom and suddenly trendy - flour and puzzles are as rare as Purell here Half my instagram feed is friends baking to kill the time, I don't think they're too broke for a loaf... yet.

    Alright, I'm in possession of sourdough starter. Buddy dropped it off the other day with TWO PAGES of instructions including diagrams and extremely specific rules I'm watching youtubes now but I'm intimidated. I'm a cook, not a baker.

    Apparently I still need whole wheat flour because using a mix of all purpose and whole makes for more sour bread? I dono, I may just give it a whirl with all purpose only because that's all I have.
