    'tiny knob of butter' - adds half a pound That's why his steaks are so fucking good. Went to his steakhouse in Vegas on a stag a couple years back, one of the best meals I've had. The sides were incredible too.

    I have been doing pan seared in a cast iron and over finished like this, its amazing

    Cast iron is definitely the way to go. I dare say it's almost better in a cast iron frying pan than on a grill.

    Im kinda with you, with all the butter and juice staying in the pan, they are pretty awesome. I have only done filets in the cast iron so far. But, I may try a T-bone this weekend

    Ya I'm 50/50. Either way, I've been following the advice of Serious Eats and salting overnight in the fridge before cast iron or grilling. I really like it this method. Serious Eats is a super legit website, Kenji Lopez-Alt is the man.
