    Sounds unreal


    Went for legit burritos at a new mexican place Sal y Limon (run by actual mexicans which is a bit rare for Vancouver). They have 6 homemade hot sauces which are all unreal. Then had a small milkshake on the way home and felt sick for the rest of the night from being so full. Worth it

    I made hamburger buns and smash burgers from scratch tonight. Lot of work but I was too lazy/paranoid to go buy more groceries and already had ground beef and flour

    Buns turned out fantastic for my first try - Chef Jon's recipes are always winners




    I always wanted to try making dinner type smash burgers but wouldn't do it again, the hot oil and fatty beef on the cast iron stunk up the house and set off the smoke detector too much. Definitely sticking to grilling beef.

    Canadian bacon and pineapple pizza with the pineapple removed. That was the last frozen pizza I had, and the only frozen pizza that was in the grocery store the last time I went.

    The Canadian bacon didn't taste like anything to me. I'm assuming real Canadian bacon has an actual taste.

    I'm not even sure there is such thing a real Canadian bacon, we don't call anything that here. From my experience it seems like what Americans call 'Canadian bacon' is what we call (cheap) ham, like the stuff that comes in the big roll from the grocery store, and is too lean to taste very good

    Meatball sandwich from a local place. I usually don't eat lunch at work, but was just hungry and wanted something different. Looked at Door Dash and this place came up called Mr Miner's Meat and Cheese. They have a limited menu because their only partially open for takeout because of the Kung Flu, so wanted to try out a local business to help support them. It was awesome, definitely ALL homemade stuff. Best meatball sandwich I've had in awhile.

    Alright I made a dope dinner.

    Here's how it went:

    - Olive oil in a large pan
    - Throw in diced onion and garlic until it's sweating but not burnt
    - Throw in a half cup of each of: artichoke hearts, sundried tomato, cherry tomato, and olives (you can fuck with the veg but IMO olives is the only mandatory one for the dish)
    - Deglaze pan with half a cup of dry white wine (let it reduce and burn off the booze a few mins or you'll blow the entire dish)
    - Throw in about a cup of good canned tomatos or tomato sauce
    - Whip some dried oregano in that bitch, with S&P and chili flakes if you like heat

    Your sauce is now mostly done, simmer it

    Meanwhile get your linguine or spaghetti boiling, with heavily salted water (it should taste like the ocean or you're doing it wrong)
    - Use some of that pasta water to mix with cornstartch into a slurry - alternatively you can use veggie/chicken stock (about a cup mixed a tablespoon of starch)
    - Add the al dente pasta, along with the slurry/stock mix to the sauce in your pan
    - Give it a good mix, and turn off the heat
    - Mix in feta cheese, parm cheese, sliced basil leaves and a few hits of lemon zest.
    - Serve up and sprinkle a bit more cheese and basil for garnish

    There you go, best Mediterranean pasta you've ever had.

    Made huaraches tonight, with some sliced beef marinaded in worcestershire and some spices, and some homemade guac.

    Huaraches it turns out are stupid easily to make. You just mix about 1:1 masa harina corn flour and warm water, plus salt until it's a fairly cakey dough. Form it by hand into oval patties about a half inch thick, and fry for a couple minutes on each side on a cast iron pan with oil. Basically cooks like a pancake. Far easier to make than tortillas because you dont need to worry about pressing it thin, and you serve it like an open face taco with whatever meat and toppings you like. Highly recommend giving it a go if you can find masa harina easily.
