    I cook a pound of ground beef, add a cup+ of sauce, some garlic, a little salt, a cup of rice, and melt in some mozzerella. The peppers are blanched for 5 minutes, stuffed, a little more mozz and spoon of sauce on top. Covered, baked at 350 for 10, then uncovered, a little more mozz, a little more sauce, then baked uncovered for another 15 or so.

    Perfection. Most recipes start with plain marinara or tomato sauce, but using a sauce you love makes them awesome.

    I am partial right now to the Mario Batali sauces. More expensive but well worth it.

    I like to make sauce from scratch, but when I cant I like to add all kinds of garlic and herbs to the stuff out of the jar

    When you say "from scratch", what exactly do you mean? Do you peel and seed fresh tomatoes and run them through a food mill 3 or 4 times, or do you use canned tomatoes?

    Usually from a can, but if I have enough fresh I will skin them and cut them up and cook down. I don't mill.

    If I use fresh I'll peel and seed, then throw the suckers in a blender for about 5 minutes. Peeling and seeding is a pain in the ass though, so a can or two of crushed tomatoes and a large can of tomato puree/paste usually does it for me.
