    Pictures from grilling last weekend.

    Well, broke in my new grill, thought I'd share a few pics. Gonna have to get used to this one, as it cooks a bit hotter that I was expecting, even with all vents closed. Everything turned out okay, just a bit more char than I like. I got the grill as a belated Father's Day gift to myself, modified it a bit to install the utensil hanger, and to make the racks removable without sliding them to one end.

    Here's the grill being seasoned:



    Used Cherry wood chips fro smoking:




    Smoked some stuffed Jalapenos to snack on while grilling the meats:



    Seared a brisket, and then moved off heat to smoke for 4 hrs:



    Pork ribs searing in:



    Beef ribs smoking, with brisket and pork ribs wrapped and simmering:




    All in all, was a good day, but damned it got hot around 3pm. lol

    Rent is going up again when my lease runs out, I can't see paying over $1000/month in rent...I'm already close to $1K/month now

    Dunno what your situation at the apartment is, but if that includes utilities, still a good deal. I wouldn't have a house except for the whole married with kids thing. I loved living in apartments, no work outside to be done, when something goes wrong, you call someone and they fix it, no cost to you....

    Nope, doesn't include utilities...and don't get me wrong, I'm still pro-apartment, but with the number of empty houses here and being able to get a mortgage that will be quite a bit less than my rent, I can't not buy right now.

    I'm somewhat split on whether you should be soaking your wood chips or not. I used to say you want to soak them if you're going to smoke but recently I've been told that when you soak them, most of what you get in the beginning is steam and not wood smoke. The idea is to control your heat so as to let the chips slowly smoulder.

    This was a first for me using chips. I'm going to try dry chips along edges of coals next time. Should work better.
