I started making casserole's on Sunday night. a) we like casseroles b) the leftover give the wife 2-3 lunches to take to work.

This week, I did mild Italian sausage simmered in arrabbiata sauce, baby portabellas and tricolor peppers saute'd in olive oil and garlic, diced tomatoes, elbow macaroni. layered as: meat sauce bottom, mac, mozzarella, vegetables, 5-cheese blend on top with the rest of the arrabbiata sauce.

Very nice.. But Im gonna tell you.. Eat that 3-4 times a week and you will put on some weight..

It's a particular type of spicy pasta sauce, and it's our favorite. It's store bought, not something I made or made up. I know I have mentioned it before when I make stuffed peppers. Watch the Dell'alpe brand, especially hot, too much for us.

Some expensive, some cheaper, the Classico is like $5 and decent. The Mario Batali used to be my go-to, but I think that brand may have changed names.
