I love the "outback" of South Australia. The Flinders Ranges has some of the best scenery in the country especially around The Brachina Gorge. The area beyond are real Aussie landscape heading out to William Creek and Coober Pedy.
On the other hand, Sydney & Melbourne are worth bypassing but head inland in both states for some magnifcent sites. The North is just bloody hot and uncomfortable buyt still sports some world class attractions.

The above.
I'm going to add grampians, Western Victoria. Gippsland, Eastern Victoria. Alpine region both in Victoria & New South Wales. All of East coast New South Wales is beautiful. Northeast coast is a bit more like Florida. Once you get too far north it's more like a tropical country. The center is amazing. Never been West. Tasmania would be great in summer as well.
I think the cities have their charm. Melbourne is great for the arts and entertainment. Sydney for the touristy crap.
Road trip wise, the difference between Australian New Zealand is in New Zealand you would be constantly entertained by the mountains. There's not much in between flat stuff.
In Australia everything is spread out a lot more and some of it is just horizon as far as you can see. But after an hour or two you see dramatic changes

Wow, has it really been 37 years since I was in Australia? Holy shit. I was mostly mid east coast, but traveled north through Brisbane maybe as far north as Townsville? Across to Darwin, then down the center Alice Springs, Ayers Rock, SA to a port city that I don't recall, across to Canberra. I agree, then even then, Syndey was awesome, but just a big city. Is King's Cross still a thing in Sydney? That was the gay section of town back then if I remember. The beaches and the broads were fucking jaw dropping
I wanted to be a Monk, but I never got the chants.

I'd say that once Victoria is sorted out, travel within Australia is going to be the only trips for a few years. I had once planned on the Victorian Alpine region and the Grampians but spent too much time elsewhere and had to cut those from the itinerary. One day....
Tasmania is best in Spring or Autumn. Summer (believe it or not) can get quite hot at times and Tasmanians don't have an abundance of Air Conditioners. If you make Tasmania, a must is a flight south to the wilderness area. No roads just flights , boats or walk. See This

Last part of that reminds me of when I was young, traveling to British Honduras (Belize) and Costa Rica. BH wasn't too bad. We'd do the final leg in a sea plane.the first time I went to the camp in CR, it was a train out of the Capitol about 5hrs, the a riverboat for another 4 or 5 hrs, the a small sea boat for another 2hrs. Only way to get to any of the local villages near the camp was by boat, burro and/or hiking through the jungle.
